I've read through a lot of articles, including the stickies. I think I have a pretty good idea on what to feed.

How often do I feed my incoming hatchling and how much?

I don't have any sulcata hatchlings, but I have a few babies of other species. I put enough food down on the feeding tile to last all day long. By the end of the day what food is left is pretty trampled, crisp, rotten-looking, but they still come out and eat it.

So, if, at the end of the day your baby's feeding tile is clean, then tomorrow put a little more down than you did today. If there is a whole bunch of food left at the end of the day, you've put down too much. It's an individual thing with each baby.

I feed babies every day as well. If it is mostly gone in the afternoon, after their daily soak, I give them more.
