I just wanted to see how much and how often I should feed my 8 month old Lepord Tortoise. I understand I need to give verried diet, but I'm just not sure how much? She seems to eat and eat forever if I let her lol but I do not want an over weight tort.

Hello. If you feed a variety of "Good" food, they Will not over eat. I feed all of my leopards a pile each morning. If it is gone in the afternoon, I give more, and feed a bigger pile the next morning. Smaller pile of not mostly gone by evening.

So just feed what they can eat? So far I've given her green leaf, cucumber, and Mazuri

That's not good enough. Choose from this list and change it weekly. Variety is key to health:

Mulberry leaves
Grape vine leaves
Hibiscus leaves
African hibiscus leaves
Blue hibiscus leaves
Rose of Sharon leaves
Rose leaves
Geraniums
Gazanias
Lavatera
Pansies
Petunias
Hostas
Honeysuckle
Cape honeysuckle
Leaves and blooms from any squash plant, like pumpkin, cucumber, summer squash, etc...
Young spineless opuntia cactus pads

I put a big pile of food on the feeding tile each morning...enough to last all day. They eat a bit, go sleep a bit, come back and eat a bit, etc. all day long. By the end of the day the food is pretty dried up, but they still eat it.

I provide a base diet of spring mix (minus the spinach) and rotate red and green leaf lettuce each morning in a pile. I give them moistened mazuri 2-3 days a week, and I throw in extra stuff, like the list above, flowers, pumpkin, melon, strawberry, cactus, etc. In between meals, the adults graze on grass and weeds in the lawn.

I agree with all above except the fruit I don't give only once in a while to my adults, too much sugar.
