Loads of types: There are so many grasses. That's all hay is... dried grass.

Some are preferred by tortoises to others, but I'm not aware if any you should not feed

Grass hay, Timothy hay , Orchard grass hay, Alfalfa hay.. Oat Hay, Barley hay.... etc..

for torts.. Bermuda grass, Orchard, grass, Timothy..
you can get it is large Bales at a Feed Store.. or the small bags at a pet store.. Not all types..
Not all will eat it either.. and they dont eat it much until they are older..
Some Feed Stores will allow people to sweep up the broken bales etc.. but it can be dusty as well..

Most leopards aren't into eating hay. You'll probably have to chop it up, rehydrate it and mix it with greens, and even then, it probably won't be their favorite. Won't hurt to try. I prefer bermuda hay or orchard grass hay over timothy.

do they graze on the grown grass ?

Do you mean the grass growing in your yard? Some will some won't. My leopard, a babcocki does not eat grass or hay yet anyway, he is 15 months. Seems the pardalis(spelling?) leopards eat that stuff more or sooner then the leopards.

Mine do not eat hay. They prefer live grass and weeds in the yard. I give them breakfast of spring mix, lettuces, and mix some mazuri in a few times a week. They will graze on the yard throughout the day, which is mostly St. Augustine grass. Of course, they eat leaves off bushes and plants too, which really ruined most of my landscaping in the backyard. :p

As others have said...there are a lot of varieties that are good for tortoises. Timothy hay, orchard grass, Bermuda hay are arguably better choices. But, as with anything, other types are good as well as part of a varied diet. The only type of hay mine will eat is Alfalfa, which they get a couple of times a week.
