what subspecies?

Hey everyone!
I just bought my first baby tortoise last week. It's name is Goulash (because he was born in Hungary ;) ) The guy i bought it from told me it was a testudo graeca (and so far i think he is right) but i would love to know the subspecies.So i hope someone here can help me!
Also, since it is freezing outside right now (i live in The Netherlands) i can't really find any fresh weeds. Can i give my tortoise (only during the winter) some dried weeds instead, like dried dandelion herbs?

Any tips about my tortoise are welcome!
(And because i noticed that a lot of people on this forum love pictures, i will post a lot of them :D

Greetings, you might want to be a bit more specific other than "dried herbs" since there are an awful lot of herbs out there used for a variety of things.
