Winter plantings?

Hello all! I have a question maybe someone might help me with. I was wondering what would be some good plants for the wintertime when the Bermuda has dies down? I live in northwestern Oklahoma. I have Bermuda hay available but my sully isn't a fan so I was hoping for some good options. I do have planters with a weed mix and one with Bermuda and one with fescue.

I was hoping for some perennials so I wouldn't have to plant every year
