After bathing my lil Delilah (a Russian tort the pet store said was female) I was rubbing her (his??!!) chin and all the sudden this strange pinkish/purplish thing protruded from her behind! I stopped and it went back in. I rubbed the chin again and it came back out! I've attached pictures of her tail - is she really a he??!

Well it does sound like you were flashed and the tail does look long enough for it to be a male's, so I would say yes you have a fine young male there.

A pic of the bottom by the tail area would be better to see along with the long tail. With what it sounds like you saw, I'm guessing male. Did it look like this but smaller
