I believe those pellets are made more for Redfoot as it has a lot of fruit in it. I wouldn't make it a big part of its diet. If you can get mazuri along with weeds or greens like arugula, ridicchio, dandelion, cactus pads, escarole, spring mix with little to no spinach, romaine sparingly. If you can still get or have in your area, hibiscus leaf and flower, mulberry leaf.

That looks 100% like a leopard, it's just in very bad shape. That appears as if you've posted 2 different pictures. The first picture doesn't appear to be the same tortoise as the 2nd and 3rd picture posted. The first one looks like a sulcata the other 2 are a leopard.

notice the legs, spots on the leopard and not on the sulcata.

I was just replying to your first post, that even in the first picture theres speckling on the legs. I think theres also some marblling between scutes and the marginal scutes look more leopard than sulcata.

I just don't think its the same tortoise, in the first picture, Those front legs have the large sulcata scales and no freckles, but the other 2 pictures are 100% a leopard.

The sleeping position scares my wife
Tell your wife that the sleeping position is 100% normal. All tortoises sleep that way. There is truly nothing to worry about in that regard.

Thank you for in identification, I have more photos to provide , I temporarily sealed the top with heatresistant microwave cling film and got 92% humidity. It may be quite difficult to find a way to obtain incandescent lamps.

Here is another thought to consider: all of the pictures (including the newest ones) show the white dot on the third central scute, so it probably is the same tortoise in all the pix. The lighting may be affecting the way the animal's coloration shows up in some of them though.

Newest photos do show the leg speckles you mentioned, so maybe it is a very light Leopard Tortoise or a possible hybrid. It almost looks like a young Egyptian Tortoise, too, but not sure how one of those would end up in a Hong Kong pet store.

Great, that you've found a way to make a cover!
Incandescent lamps a really rare in the stores now, but you can find them in pet stores:
Arcadia Solar Basking Floodlight or Exo-Terra Daily Basking Spot Lamp, for example (these are R20/BR20/BR30 type lamps). Don't get any "intense" or spot lights (halogen, PAR-type lamps, metal-hallide, mercury vapour lamps). You may post a picture to confirm the choice if you'd like.

To feed from a slate (flat stone) - yes it's fine. And non-chopped food is fine as well (he can bite safe chunks). If he eat everything - put more food next time.
When feeding Mazuri - wet them in water and mix with greens.
